      Title: Lobster-Salad-Stuffed Eggs

      Yield: 2 Servings
 
    1/4 lb Cooked lobster or King crab
           meat
      2    Radishes; chopped fine
      2 tb Finely chopped scallion
      2 tb Finely chopped celery
      1 tb Minced fresh parsley leaves
      2 tb Mayonnaise
      2 ts Fresh lemon juice
    1/8 ts Tabasco
      3    Hard-boiled large eggs
    1/2 c  Finely shredded romaine and
    1/2 c  Finely shredded cabbage for
           -garnish
 
  In a bowl combine well the lobster, the radishes, the scallion,
  the celery, the parsley, the mayonnaise, the lemon juice, the
  Tabasco, and salt and pepper to taste. Halve the eggs crosswise
  and remove the yolks. Chop 1 of the yolks, reserving the other 2
  for another use, and stir it into the lobster salad. Divide the
  romaine and the cabbage between 2 salad plates, forming nests,
  fill the whites with the lobster salad, and arrange the eggs in
  the nests.
  
  Serves 2 as a first course.

      Title: Kueh Koci - Coconut Sweets in Banana Leaves, Nonya
 Categories: Malaysian, Desserts
      Yield: 6 Servings
 
    300 g  Dessicated coconut
      1 c  Sugar
      1 c  Brown sugar
    3/4 c  Pandan juice (or pandan
           Essence diluted in water)
      2 c  Glutinous flour
      1 c  Coconut cream
    3/4 c  White sugar
      6 lg Banana leaves
      1 TB oil
 
  Mix the coconut and sugars together in a saucepan and stir over low
  heat until the sugar dissolves. Cool and roll into small balls.
  
  Soak the banana leaves in boiling water until they change colour,
  remove and drain, cool and cut into rounds about 15 cm in diameter.
  
  Mix the flour and coconut, gradually add the pandan juice and sugar
  and knead to a smooth dough. Lightly oil the banana leaves, fold into
  a cone shape and fill with a ball of green dough. Press a ball of
  sugar into the dough and cover with another layer of dough. Fold the
  corners and steam for about 15 minutes. Cool and serve.
  
  Note: If banana leaves are unavailable, the dough can be steamed on a
  plate.
