The problem is the acid balance is all wrong, and if you
try to fix it up with vinegar or citrus, the taste gets
weird. As I like what meat fat and carrots do to each
other, I have been known to use such a mixture to flavor
starchy things; I wouldn't recommend this unless you
appreciate the bitter component of roots.

Oddly, I would put in three carrots and two ribs of celery. I
like the bitter tang. In recent years I have even come to like
parsnips - and tolerate turnips. I haven't yet come round to
yellow turnips, though, even though they taste so good with
butter and salt, as the story goes.

The Italians have been putting squash and such on their pasta
for decades. The advantage of which being that you get the

The rules on mortgage interest have always astonished me
- I do see how they were crafted to fulfill a certain social
purpose, but the engineers didn't count on the devious
cleverness of the implementers.

That's what Lilli has been doing with some success.

The problem with my group, the one in which I met her, is
that instead of having young, gorgeous, rich people, it
is full of those who by cunning and working the system have
gotten access to bizarre luxuries and privileges despite
being, in general, about as broke as I am. So instead of a
young, gorgeous, rich, gullible sugar granddaughter, I end
up hanging out with cunning old folks working the system.

cat: pumpkin, pasta, Italian
servings: 1

2 3/4 c flour
3 eggs
1 pn salt
1 kg pumpkin
1/2 c amaretti, crumbled
2 oz mostarda di Cremona, minced
1/2 ts grated nutmeg
1/2 ts sugar
s&p
1 c grated Parmesan
1 Tb dry bread crumbs
1 Tb grappa
5 Tb butter, melted

Make a volcano of the flour and break the eggs and salt
into the well. Mix with fingers or a fork gradually
incorporating flour. Knead dough 5 min; let rest 30 min;
knead again 3 min. Let rest.

Bake pumpkin at 350F for 45 min. Process smooth and
mix with amaretti, mostarda di Cremona, nutmeg, sugar,
salt, pepper, half the Parmesan, bread crumbs, and grappa.

Roll dough out as thin as possible. Cut into 3-1/4" wide
strips. Place filling 1-3/4" apart in a row, 2-1/2" from
the edge of the sheet. Fold edges of the strip over the
mounds of filling and press gently between each mound.
Cut between each mound to get square pillows. Press edges
together, gluing with a little water (or egg) as necessary.

Cook in boiling water 5 min. Drain and put in a bowl with
the butter and the rest of the cheese. Serve immediately.
