      1    Thin baguette; not
           - sourdough
      5 ts Extra virgin olive oil
           Salt
      2 cl Garlic
      1 lb Ahi tuna filets
           Fresh ground pepper
  1 1/2 lb Mixed-color heirloom
           - tomatoes
      3 tb Green olive paste or green
           - olive-based tapenade

  Seared Ahi Tuna with Green Olive Toasts & Heirloom Tomato
  Salad, looks beautiful, which is why the recipe is very
  specific about presentation. Try to find heirloom tomatoes
  in tones of green and yellow and purple; they will glisten
  next to the fat slices of ahi, which reveal ruby-red
  bellies.

  Preheat the oven to 400øF/205øC.

  Slice the baguette on the diagonal into 1-inch thick
  slices; try to get about 16 long, pointed pieces. Place in
  a bowl and sprinkle lightly with 1 teaspoon of the olive
  oil and a pinch of salt. Toss to coat.

  Place the slices on a baking sheet and bake for 5 minutes
  per side, or until the toasts are browned.

  Finely mince the garlic.

  Leave the ahi in large pieces. Rub both sides of each
  piece with salt, pepper and garlic.

  Cut the tomatoes into thin wedges and place in a bowl.
  Drizzle with 2 teaspoons olive oil and season with a dash
  of salt and pepper; toss gently.

  Heat 1 to 2 teaspoons olive oil in a large skillet over
  high heat. Add the tuna and saute for about 1 minute per
  side for rare (ruby-red but warm in the middle).

  Spread each toast with a small amount (about 1/2 teaspoon)
  of the green olive paste. Slice the tuna about 1/2-inch
  thick.

  Arrange the toasts on plates, pointy ends pointing out,
  then drape a piece of tuna over each one.

  Divide the tomato salad among plates and serve.

  Serves 4.
