      Title: Peach And Pecan Crisp
 Categories: Dessert
      Yield: 1 Servings
 
           Butter (for greasing pan)
      5 lb Medium-size very ripe
           Peaches
      1    Lemon zest and juice
      2 ts Vanilla extract
      1 c  All-purpose flour
    1/2 c  White sugar
      1 c  Brown sugar
      1 c  Pecans, chopped
      1 c  "old-fashioned" rolled oats
           (not instant)
  1 1/2    Sticks butter or margarine,
           Cold
 
  Preheat oven to 375 degrees f.  Place the rack in the center.
  
  Butter an 8 x 11-inch rectangular glass baking dish.
  
  Bring a large pot of water to a boil.  Drop 2 or 3 peaches in the
  water for 30 seconds.  Remove and place in ice water.  Then peel.
  Repeat until all the peaches are blanched (skip this if you don't
  mind the skins and the fuzz) and peeled.  Cut the peaches in thick
  slices.
  
  In a bowl, place the slices.  Use a grater to remove the bright yellow
  skin of the lemon and then squeeze the lemon.  Toss the peaches with
  the vanilla extract, lemon juice, and lemon zest.  Set aside.
  
  In a bowl, sift together the flour and sugars, pecans, and rolled
  oats. Cut the cold butter into thin slices and blend into the dry
  mixture.  Use your hands to rub the mixture together until it has a
  very crumbly texture.
  
  In the glass baking dish, place 1/3 of the mixture and press it with
  your hands to make a bottom crust.  It will be thin.  Drain the peach
  slices and place them on top of the crust.  Spread the remaining
  crumbs evenly on top.
  
  Bake in the preheated oven for about 45 minutes or until the top is
  browned and very crisp.
  
  Serve warm or cold with ice cream or whipped cream.
  
  Makes 8 servings.
