     Title: Bacan - Cuban Green Banana & Meat Pie

  Servings: 8

           Pork Stuffing:
     10 oz lean pork meat cubed 3/4"
      2 tb corn oil
    1/2 c  onion chopped
    1/2 c  Green Bell pepper seeded &
           chopped
      4 ea garlic cloves minced
  1 3/4 c  tomato peeled & seeded &
           chopped
      1 TB white wine
      1 ea banana leaf
      7 ea green bananas
      1 ts lime juice
      4 ea garlic cloves mashed
    1/4 ts annatto powder or oil
      7 TB coconut milk

Pork Stuffing: Heat your oil in a saucepan then saute pork cubes for
12-15 mins. until golden. Add onion, bell pepper & minced garlic.
Saute on a low-heat for 3-4 mins. then add your tomato. Cook for 6-8
more mins. while stirring occasionally. Add your wine seasoned with
salt. Cover then cook for 8-10 mins. on low-heat until your meat is
tender & swimming in a thick sauce.

Wrapping: Start a large pot of water boiling Cut your banana leaf
into 8 rectangles 7" x 10"  & cut 8 more 3" x 10". Wash pieces of
banana leaf well then boil them in water for 1 min. so that they
become malleable. Dry them well. Peel your bananas then grate
bananas on a fine blade, . Add lime juice, garlic & your annatto
powder combined with coconut milk. Season with salt & pepper then
mix well. Place 1 piece of banana leaf of each size on worksurface
in a cross shape. Place  2 tb of your banana mixture in center then
add a line of your stewed meat on top. Fold leaves over to form a
rectangular packet a.k.a. bacan. Tie like a parcel with kitchen
string. Drop your bacan into boiling water for 30 mins. rempove from
water then drain. Served in their wrapping. You may be eat bacans
cold but they are not as tasty.

*NOTE: Bacan is a dish that is made only in the region of Baracoa,
the town on the North coast of the far East of the island of Cuba.
This region is extremely difficult to reach by land thus it was
isolated from the rest of Cuba for a long time. This isolation has
allowed some customs that have more in common with other Caribbean
islands than Cuba itself to become rooted in this region's populace
one such is the use of coconut milk in cooking. This region produces
a great deal of fruit including the coconut & bananas. Bacan is a
small pasty a.k.a. "pie" made with green bananas mixed with coconut
milk and seasoned with garlic and lime.  The pasty can be filled
with pork as in this recipe, or with stewed crab or smoked meat.
The pasties are cooked wrapped in banana leaves and are eaten either
at lunch or with milky coffee for breakfast.
