The first few times I had Bombay Sapphire (which isn't just a
load of B.S. - it actually tastes better than most other gin)
I didn't know the color of the liquid, as the setting was a
darkish one. I actually wished that the gin was blue, but it
isn't.

Rao's Famous Lemon Chicken
cat: celebrity, main, poultry
serves: 6

2 broiling chickens (2.5 - 3 lb ea), halved
1 1/3 c fresh lemon juice
2/3 c olive oil
1 Tb red wine vinegar [M says - don't bother]
1 ts minced garlic
1/2 ts dried oregano
salt and freshly ground black pepper
1/4 c chopped Italian parsley
1 lg loaf crusty Italian bread

Preheat broiler. Place chicken halves, skin side down, on a
broiler pan. Broil 30 min, turning once, until skin is golden
brown and juices run clear when the thigh is pierced. [M says
broil a few min less than this, possibly 25 min.]
Remove chicken from the broiler but do not shut it off.

While chicken is broiling, whisk together the lemon juice,
oil, vinegar, garlic, oregano, and salt and pepper to taste.

Using foil, line a baking sheet with sides that will fit under
the broiler. Cut each chicken half into about 6 pieces, and put
on the broiler pan. Pour sauce over chicken, and turn pieces to
coat thoroughly. Broil chicken, skin side down, another 3 min.
Turn skin side up, and broil about 1 min longer, watching
carefully so they don't burn. (If grilling, toss chicken
with half the sauce and grill briefly.) Place chicken on a
warm serving platter or on 6 warm plates.

Pour the sauce from the baking sheet (or the reserved sauce if
grilling) into a saucepan, and add the parsley. Bring to a boil.
Pour the hot sauce over the chicken, and serve with crusty bread.
