Very true, and then it tastes even better with all the sopped up juices.
It does need to be made fresh and served hot.  Gail and I went to an
Ethiopian place just south of us and their injera was brought in from
another bakery at the start of the day.  It was not even luke warm on
the platter when the food was served.   Pretty much a let down and cross
that place off of our list.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Flounder Stuffed With Crabmeat And Basil
 Categories: Seafood, Crab, Herb, Low cal
      Yield: 1 Servings
 
      4    Flounder fillets
    1/2 c  Basil leaves, packed
      1 tb Reduced-calorie mayonnaise
    1/8 ts Salt
    1/4 lb Crabmeat
    1/4 c  Bread crumbs
      1 sm Garlic clove
    1/8 ts Paprika
 
  Preheat oven to 425 degrees F. Wash the flounder fillets and pat dry
  with paper towel.  Coat with breadcrumbs and set aside. In the food
  processor, combine and puree together the basil, garlic, mayonnaise,
  and salt.  Transfer to a bowl and stir in the crabmeat. Spoon 2
  Tablespoons of basil-crabmeat filling on each fillet, then roll the
  fish over the filling to create open-sided roulades. Lay the flounder
  rolls ona bake-and-serve casserole, sprinkle lightly with paprika,
  and bake for 8 minutes.
