I hope he gets a dietitian who is not a food Nazi. It sure made a difference to
me when my RD turned out to be reasonable and willing to discuss and to learn
with me. I've seen other (horror story) examples that others have suffered
through. I don't watch carbs as assiduously as you - and I eat pretty much what
I like. But, I have changed my likes over time to a more friendly diet. Still,
my primary physician was pretty happy with me when he called with the results
of my last physical and visit to the lab. A1C is at 6.1, BP is in range as is
the fasting glucose number. And I've shed another 18# from my weight on
discharge from the gall bladder surgery last Turkey Day season.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Cheesy Shrimp & Rice
 Categories: Seafood, Cheese, Soups, Rice, Vegetables
      Yield: 12 servings
 
 12 1/2 oz (2 pkg) quick-cooking long
           - grain & wild rice mix
      2 c  Chopped red bell pepper
      2 c  Chopped celery
      2 c  Chopped onions
    1/3 c  Butter
 21 1/2 oz (2 cans) condensed golden
           - mushroom soup
      8 oz Shredded Emmenthaler cheese
      8 oz Shredded cheddar cheese
    1/2 ts Black pepper
      2 lb Medium shrimp; cooked,
           - peeled, deveined, tail off
           Lemon slices
 
  Prepare rice mixes according to package directions.

  Meanwhile, in a 4-quart Dutch oven cook and stir sweet
  peppers, celery, and onions in hot butter about 5 minutes
  or just until tender.
  
  In a very large bowl combine the cooked rice, cooked
  vegetable mixture, soup, Swiss cheese, half of the cheddar
  cheese, and the black pepper. Stir in the shrimp. Spoon
  mixture into two 3-quart rectangular baking dishes.
  
  Bake, covered, in a 375oF/190oC oven about 35 minutes or
  until heated through, rotating baking dishes halfway
  through baking. Remove from oven; sprinkle with remaining
  cheddar cheese. Let stand 10 minutes before serving (if
  toting, see note). If desired, garnish with lemon slices.
  
  Makes 12 servings.
  
  To Tote: Do not let stand after baking. Cover tightly.
  Transport in an insulated carrier.
  
  For 6 Servings: Prepare using method above, except use a
  large saucepan for cooking the vegetables and spoon shrimp
  mixture into one 3 quart rectangular baking dish.
