That's some people. So, you are damning a whole category of food because *some*
people screw up when *they* make it? I've had wings made to the original Anchor
Bar recipe - using Frank's Hot Sauce and butter. They are zippy - but, not
overly hot. And I have noted here in past that there is such a thing as "stupid
hot".

That was at the place where *you* worked. And it, no doubt, was suffering from
bad/lazy management. My local Popeyes has been consistently good. But, then I
see the owners working in the kitchen right along with the staff. The family
who owns the local franchise is either Indian or Pakistani and they work hard
for their money. Restaurants which serve B.S. food or give poor service do not
last long in this town.

When that happens to me at a drive-through I park and go inside. Around here
things get fixed in a hurry.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Mexican Cornbread Casserole
 Categories: Breads, Beef, Vegetables, Chilies, Cheese
      Yield: 6 servings
 
           Cooking Spray
  8 1/2 oz Pkg corn muffin mix
      1 lg Egg; beaten
    1/3 c  Milk
    3/4 c  Whole kernel corn; divided
    1/2 lb Ground chuck
     10 oz Can Ro*Tel Original Diced
           - Tomatoes & Green Chilies;
           - drained
      8 oz Can Ro*Tel Original Tomato
           - & Green Chile Sauce
    1/2 ts Ground cumin
      1 c  Shredded Mexican cheese
           - blend
 
  Preheat oven to 375oF/190oC.
  
  Spray 8x8-inch glass baking dish with cooking spray; set
  aside. Stir together cornbread mix, Egg Beaters, milk, and
  half of corn in bowl. Pour into prepared dish.
  
  Meanwhile, cook beef in medium skillet over medium-high
  heat 3 to 5 minutes or until crumbled and no longer pink,
  stirring occasionally; drain. Stir in drained tomatoes,
  tomato sauce, remaining corn, and cumin. Pour mixture over
  top of cornbread batter. Top with cheese.
  
  Bake 15 to 20 minutes or until edges are lightly browned
  and cornbread is done.
