Ärende: eggplant 110
====================
Hi Michael,

 ML> I don't bother to peel anyway.
RH> Depends on how much work I want to put into it, if I peel or not. If
RH> it's a long and involved dish, I'll skip peeling. Fast and easy,
RH> peeling will depend on my mind set when I start cooking.

ML> Funny, the added time and trouble of peeling has never been
ML> part of the equation for me.

But then you have two working wrists/no carpal tunnel. I have two semi
working wrist, with one having had a carpal tunnel release a year ago. I
didn't peel the eggplant (2 medium/small) I used for the moussaka I made
tonight.

ML> Don't recall Dimitri's moussaka except that someone or other
ML> had it at an echo picnic, and it might have had potatoes.
RH> I don't remember--it seems like it did but then too, I could be
RH> thinking of something else. If it did, the potatoes were a very light &
 RH> fluffy mashed type.

ML> I may have to go investigate the subject.

Enjoy your meal there. What I made tonight was a simple one, ground
beef, onion, garlic, tomato sauce & paste, seasonings and cheese in
addition to the eggplant. Should have fixed one more eggplant than I
did; it was a bit thin on that but otherwise a good dish. I will make it
again.

ML> Ah, farmers' markets - I don't get to them often; missed the
ML> one in Williamsport yesterday by 8 hours or so. The eggplant,
RH> Sigh! I try to get to the market every week I'm in town.

ML> I try but am in the right vicinity about 3-4 times a year
ML> and generally am not in a position to buy anything that has
ML> to be cooked - or that isn't immediately consumable.

OTOH, we are in the place where we cook our acquisitions over several
days. We stopped at the Wednesday market briefly and got some more
eggplant (will grill it tomorrow) and green tomatoes. Tomorrow I want to
get some more tomatoes, probably the cherry size, for salads.

ML> All right, you can envy me my travels, and I will envy
 ML> you your kitchen equipment.
RH> Overall, I'm not envious of your travels, especially if I've put in a
RH> lot of road time myself. Sometimes it's nice to have a place where you
RH> can stay for a good while, stocking up that freezer for the winter.

ML> One recurring dream motif over the decades has been of leading
ML> a peripatetic life and having a storage unit for my stuff (some
ML> of these have me living in it). I used to think that it was
ML> some kind of anxiety dream; now I realize that it was/is more
 ML> of a wish-fulfillment one.

Sounds like it; you've done quite a bit of wandering in the couple of
decades I've been reading Fido. The other day I asked Steve if he'd
rather go back to Germany or Hawaii; we agreed that we'd like to go back
to Germany and do more travel than we were able to do when stationed
there. Nice thing about the Army--we got to live in several places that
were markedly different from each other. Got an exposure to the various
cultures & foods we wouldn't have otherwise.

RH> Big ones are scrip; smaller are OTC. I'm going for another blood test
RH> this week, maybe I can stay with just the OTC and salt blend for a
 RH> while.

ML> When you do, let me know the dose for my own reference. My doc
ML> wanted to prescribe me a KCl supplement, and I said I'd just
 ML> use the salt substitute.

ML> I was thinking of the puny 99 mg (1.25 mEq) pills and how 1/10 ts
ML> yields as much K as 3 or 4 of these.

ML> Also that according to drugs.com the dose to prevent hypokalemia
ML> is 10-20 mEq a day (the dose to treat it is 40-100 mEq a day) ...
ML> so that the effective dose of those OTC supplements would thus be
ML> 8 to 16 pills a day, so taking one or two is like having a bite
ML> extra of banana a day, more placebo than anything else.

FWIW, the perscription potassium pills are Klor-Con 20M tablets, don't
know anything more on them.

Catch you later,
Ruth
