      Title: Mustards Grill's Mexican Chocolate Cookies

  1 1/2 c  All-purpose flour
    3/4 c  Unsweetened cocoa powder;
           - sifted
    3/4 ts Ground cinnamon
    1/4 ts Salt
    1/8 ts Fresh ground black pepper
    1/8 ts Cayenne
      6 oz Unsalted butter; softened
      1 c  Sugar
      1 lg Egg
  1 1/2 ts Pure vanilla extract
    1/2 c  Toasted almonds; chopped
           - medium fine
    1/2 c  Cocoa nibs

  Mustards pastry chef Annie Baker makes these spicy cookies
  in a triangle shape, but rounds are easier for the home
  baker. The cookies are soft, almost brownie like, with an
  intense cocoa flavor and a crunchy coating of toasted
  almonds and cocoa nibs.

  In a small bowl, stir together the flour, cocoa, cinnamon,
  salt, black pepper and cayenne pepper.

  In an electric mixer, cream the butter and sugar. Add the
  egg and vanilla and mix until blended. Add the dry
  ingredients and beat on low speed just until incorporated.

  Shape the dough into a 12-inch log and wrap in wax paper
  or plastic wrap. Refrigerate at least 2 hours to firm the
  dough.

  Preheat the oven to 325øF/163øC. Put the almonds in a
  9-by-13-inch baking dish. The cocoa nibs are already
  coarsely chopped, but chop them further with a chef's
  knife so there are no coarse pieces. Add to the almonds
  and mix well. Roll the dough log in the almond-nib
  mixture, pressing the nuts and nibs into the dough to coat
  the log evenly and thoroughly.

  Cut the log into slices a scant 1/2-inch thick and bake on
  parchment-lined baking sheets until the cookies are no
  longer soft to the touch, about 10 minutes. Let them rest
  on the baking sheet for about 1 minute to firm them, then
  transfer to a rack with a metal spatula. Cool completely
  before serving. Store in an airtight container.
