      Title: Jalape+o Cheesecake
 Categories: Cakes, Chilies, Appetisers, Cheesecake
      Yield: 9 servings
 
  1 1/2 c  Crushed tortilla chips
      6 tb Melted butter
     16 oz Cream cheese; room temp
      3 lg Eggs
    1/4 c  All-purpose flour
  1 1/2 c  Sour cream; divided
      1 cl Garlic; minced or pressed
  4 1/2 oz Can chopped green chiles
      1    Fresh jalape+o; stemmed,
           - seeded, minced
      2 c  Grated Co-Jack blend or
           - cheddar cheese
           Chopped plum tomatoes
           Chopped green onions
           Diced black olives
           Chopped cilantro
 
  This is an outstanding appetizer. Cut it into thin
  wedges, put it on your buffet table, and watch it
  disappear.
  
  Preheat oven to 300oF. Lightly grease the sides of a
  9-inch springform pan.
  
  Pour the melted butter over the crushed tortilla chips
  and toss to combine. Press on bottom and one-half inch
  up the sides of the pan. Bake for 10 minutes. Remove
  from oven and set aside.
  
  With an electric mixer at high speed, beat the cream
  cheese until light and fluffy. Add the eggs, one at a
  time, and beat to incorporate. Reduce mixer speed to
  low, and blend in the flour, 1 cup of the sour cream.
  Beat until smooth. Add the garlic, green chiles and
  minced jalape+o. Turn off the mixer, and stir in the
  cheese.
  
  Pour filling into crust, and bake for 1 hour. Turn
  oven off, and leave cheesecake in the oven for 1 hour
  with the door closed. Remove from oven and cool. When
  cool, loosen the cheesecake from the sides of the pan
  by running a knife around the inside edge. Do not
  remove cheesecake from pan. Cover and refrigerate for
  1 hour.
  
  When ready to serve, spring the pan and remove the
  cheesecake. Spread the remaining 1/2 cup sour cream
  evenly over the top and sprinkle with chopped
  tomatoes, green onions, olives and cilantro.

      Yield: 3 servings
 
      2 c  Sugar
      2 c  All-purpose flour
    1/4 c  Cocoa
      1 ts Baking soda
      1 ts Ground cinnamon
    1/2 c  Butter; melted
    1/2 c  Buttermilk
    1/2 c  Vegetable oil
      1 c  Water
      2    Eggs; lightly beaten
      1 ts Vanilla extract

    1/4 c  Plus 2 tb milk
    1/4 c  Cocoa
    1/2 c  Butter
      1 lb Confectioners' sugar;
           - sifted
      1 ts Vanilla extract
      1 c  Chopped pecans
 
  This cake is moist, chocolatey and altogether
  delicious. It's quick to put together. You don't even
  have to get out your electric mixer; you can mix up
  this cake by hand in a jiffy.
  
  Preheat oven to 400XF. Grease and flour a 13x9x2-inch
  baking pan.
  
  Sift together the sugar, flour, cocoa, baking soda and
  cinnamon, and set aside. Stir together the remaining
  ingredients. (Since I'm a chocolate freak, I use just a
  half-teaspoon of cinnamon. I want the cinnamon flavor
  to come through, but only just a hint of it. Strictly
  a matter of personal preference.) Mix the wet
  ingredients with the dry ingredients, stirring until
  you have a smooth, rather thin batter.
  
  Pour into your prepared pan, and bake at 400XF for
  20-25 minutes, or until a toothpick comes out clean.
  
  While the cake is baking, PREPARE THE FROSTING:
  
  Mix the milk and cocoa in a heavy saucepan (stir, stir,
  stir). Add the butter and, over medium heat, stir until
  the butter melts. Remove from heat and gradually stir
  in the sugar and vanilla until smooth. Add the pecans.
  
  When the cake is just out of the oven, spread the
  frosting evenly on the hot cake.
  
  Note: This is a good recipe in which to use dry
  buttermilk.
