I've heard that poppy production is way up in Afghanistan now that the
Taliban are out of power.  Where is the funding for those crops going?

There's more to it than that.  We have had a US presense in the gulf for
decades, if only to protect our interests there.  When I say interests, I
mean oil flow.  Now I'm also quite aware that many US companies make hefty
profits by dealing with the oil market there in one way or another; not
just by selling oil to US but to other buyers.  So it's not just that the US
is buying foreign oil, but it 'invaded' the gulf with oil companies,
contractors, and the security forces, long before it invaded Iraq.
