I suspect that the old-time "boiling down works" did all their cooking
in open vats, which did smell quite horrible. In the Vanuatu abattoir,
where I worked for a while, the smell was not too bad, but they
rendered down the bones and offcuts in a giant pressure cooker. By the
time the contents was transformed into tallow and chook food the heat
had probably destroyed most of the evil-smelling molecules. The
contents of that pressure cooker was transferred to a huge centrifuge
to separate the tallow from the granular other stuff.  Probably much
the same procedure is followed in your "By-products" factory.

What used to be the Adelaide Abattoirs is now a residential suburb,
and the abattoirs are 70 km away near a country town.  The smells from
the old place were not too bad, as those yards were not feedlots, but
only used to hold beasts prior to killing.  The animals were
grass-fed.  The worst part of that was riding my motorbike to work,
passing a cattle truck at the time a cow chose to pee out the side -
in my face.  I soon learnt to watch out for such hazards.

These sweeter-smelling days even the main garbage dump for Adelaide
has everything covered with an impervious clay layer.  Pipes are poked
through it to collect the methane gas generated by the decaying
organic material, and after powering compressors, the surplus is mixed
with natural gas and fed to generators at the nearby Cooper's Brewery.

      Title: Rose-Scented Fruit Salad with Lemon Sorbet
 Categories: Desserts
      Yield: 6 Servings
 
    1/2 c  Water
    1/2 c  Sugar- castor
      1    Vanilla beans; scraped
      2    Limes; juice of
      2 ts Rosewater
    600 g  Lychees; peeled weight
    500 g  Strawberries; hulled weight
      1 pk Raspberries
      1 c  Cherries; pitted
      2 c  LEMON SORBET
 
  Combine water, sugar, scraped vanilla seeds in a small pan & slowly
  bring to the boil. Remove from the heat, cool, then stir in lime
  juice & rosewater.
  
  Combine with peeled lychees, halved strawberries, raspberries & a
  handful of pitted cherries, & refrigerate to chill.
  
  Serve topped with scoops of store-bought lemon sorbet.
