==============================
-=> Quoting Michael Loo to Glen Jamieson <=-

ML> I'd agree as to the taste, but I'm not so invested in
ML> Armenianism. Then again I've never had any bread so
ML> thin as lavash in Turkey. Then again my experience in
ML> bread is limited by my choice.
GJ> At least you know lavash and I don't.
ML> If you knew lavash like I know lavash, hot, hot, on
ML> top of the grill ...

I think I know enough now not to order it from the Turkish bakery.

GJ> RECESS CAKE TIN............. SPONGE FLAN PAN
ML> Neither term is in use in the US.

Nor here.

GJ> RED FISH FILLETS............ RED SNAPPER
 ML> Different kinds of fish.

Likewise neither used here.

 GJ> RUMP STEAK.................. SIRLOIN

ML> Yes and no. Sirloin means many things, including what
ML> is sold here as rump steak or sirloin tip steak, but
ML> it encompasses quite different parts of the animal,
ML> from the rump to the "sirloin strip," which is the
ML> large meat muscle from the T-bone or "porterhouse."

 GJ> SCONES...................... BISCUITS
ML> Different things. You don't have our biscuits. We
 ML> seldom have your scones.

Our biscuits are crisp, often sweet and sometimes filled with icing.
Probably similar to your cookies. Your crackers are also our biscuits,
as are Oreos and TimTams.

GJ> SHALLOTS.................... SCALLIONS OR WELSH ONION
ML> I've seen the term Welsh onion about 3 times in my life.

Three times more often than I have. I would have assumed that a Welsh
onion was a leek.

 GJ> SHELL [TO].................. SHUCK/HULL [TO]
ML> All these terms are used in the US. Shucking generally
ML> is used for shellfish or for the outer leaves of sweet corn.
ML> Hulling mostly for removing hard bits of vegetable things.
ML> Shelling is the generic term.

 GJ> SHIN [FOR MEAT]............. SHANK
 ML> Both are used.

Likewise here.

 GJ> SIEVE....................... STRAIN/STRAINER
ML> All used in the US, interchangeably.

 GJ> SIFT [TO]................... STRAIN [TO]
 ML> Different processes.

Agreed.

 GJ> SKIRT STEAK................. FLANK STEAK
ML> Different cuts. Flank is from the flank; skirt is
 ML> the diaphragm.

That is probably a correct equivalent. Flank is unknown here.

 GJ> SNAPPER..................... SEA BASS
 ML> Different fish.

 GJ> SNOW PEAS................... SUGAR PEAS/MANGE-YOUT
ML> Sugar peas and snow peas have nothing in common. The term
ML> "mange-tout" is used for both, interchangeably, in arenas
ML> where Anglophilism is more prized than culinary accuracy.

Sugar-snap peas and snow peas are both well-known, and different.

GJ> SPRING ONIONS............... SCALLION OR GREEN ONION
ML> All are used. See shallot above - do you people actually
ML> not know what a shallot really is?

Some do. I see them offered for sale in a few places, at $12/kg.

GJ> TEA TOWEL................... DISH TOWEL/GLASS CLOTH
ML> Tea towel and dish towel are used interchangeably. Glass
 ML> cloth is British.

I had never heard of glass cloth.

GJ> THICKENED CREAM............. HEAVY OR WHIPPING CREAM
 ML> No. Three different things.

In that case, heavy or whipping cream is not sold here.

GJ> TREVALLY.................... BLUE FISH OR COD
ML> Three completely dissimilar fish in morphology and taste.

 GJ> VANILLA ESSENCE............. VANILLA EXTRACT
ML> Both terms are used, though extract is more common here.

So you will pass that one. :)

GJ> VEAL CUTLETS................ VEAL RIB CHOPS
ML> Not the same thing. It's your problem that you use the
ML> term cutlet for both leg cutlets and rib chips.

So, a half pass.

 GJ> WHISK [TO].................. WHIP/BEAT [TO]
ML> Whisk is used much more frequently than whip. Beating
ML> eggs is done with a beater; whisking them is done with
ML> a whisk (rarely, whip). Result is the same.

Which is all that matters...
