Fascinating the range of dietary issues present even in this
small conference. I for one have been through several of them
- gone through some of the food allergies (oranges, tomatoes,
nuts, and so on) and living with the lactose issue and the all
sugars issue with greater or lesser intensity for probably ever.
If I became a strict meatarian, things would be much easier -
I guess your daughter is sort of in that boat.

If we can keep the farms going to feed all those extra people,
and if we can keep the extra people fulfilled and happy, I'm okay
with life extension, but I don't see it a priority. Anyhow, if
we fix the cancer problem, more will get heart disease, and vice
versa. To paraphrase our house philosopher Mr. Dirty above, ain't
no way we're gettin' out of this alive.

Vegetable ragout with chervil
cat: vegetarian, main
serves: 4

8 to 10 baby carrots
3 to 4 baby turnips, peeled
2 to 3 baby zucchini
10 to 12 sm white onions and/or green onions, trimmed
6 Tb sweet butter [vegans: use 4 Tb margarine, 2 Tb oil]
1 1/2 c broccoli florets or shredded cabbage
1/2 md red bell pepper, diced
1/2 ts olive oil
1/2 c cold water
1 ts lemon juice
s&p
1/4 c fresh chervil leaves

Slice carrots, turnips, and zucchini into similar-sized ovals.
Place these and the onions into separate saucepans with water
to cover and 1 Tb butter in each. Cook until done, 3 to 7 min.
Blanch cabbage or broccoli in boiling water 1 min. Saute red
pepper in olive oil for 1 min. Drain all vegetables.

Melt remaining 2 Tb butter in a large heavy pan. Saute
carrots, turnips, zucchini, and onions and saute 1 min or
until pale golden but not browned. Deglaze with cold water
and lemon juice. Add cabbage and red pepper. Correct
seasoning. Serve garnished with chervil.
